In last place is America’s most popular salad variety, iceberg, which has the fewest nutrients due to the way in which it grows as a tight head. This means that the inner leaves receive minimal sunlight exposure and remain light green.

Ranked seventh is red leaf lettuce, which provides abundant vitamin A and K and combines succulence with crispiness and a mild, slightly bitter taste. Green leaf is ranked second and combines red leaf’s benefits with significant vitamin C, potassium, calcium, phosphorus, and manganese.

The most healthy lettuce type is romaine lettuce, which has 10 times the beta carotene of iceberg and approaches spinach in this category. Its long dark-green leaves, with white center ribs, are among the most satisfyingly crunchy when incorporated in salads.
